Our Cheerwine Cherry Kale Salad is finished with cherries, goat cheese, Cheerwine glazed pecans, and a delightful Cheerwine vinaigrette for a salad hearty enough to stand alone, or as a praise-worthy accompaniment to your main dish.
Ingredients
For Vinaigrette
- 1 cup fresh cherries, pitted
- ¼ cup balsamic vinegar
- ¼ cup olive oil
- 2 tablespoons Cheerwine Syrup
- 1 teaspoon lemon juice
- Pinch of salt
For Salad
- 3 cups kale, chopped (or kale mix)
- 1 cup shaved Brussels sprouts
- ½ cup microgreens
- ½ cup fresh cherries, pitted and halved
- ½ cup goat cheese crumbles
- ½ cup Cheerwine Glazed Pecans (prepared)
Instructions
For Vinaigrette
Sauté cherries over medium heat until soft (about 5 minutes). Add balsamic vinegar, olive oil, Cheerwine Syrup, lemon juice, and salt then whisk together. Bring to a boil, then simmer 5-10 minutes. Transfer mixture to a blender and blend until smooth. Place in refrigerator to cool.

For Salad
In a large salad bowl, combine kale, Brussels sprouts, and microgreens then toss to combine. Add cooled vinaigrette to salad then toss to coat. Top with cherries, goat cheese, and prepared Cheerwine Glazed Pecans. Serve immediately.
