Serve this delicious pizza for lunch or as a complement to your game day spread of snacks. That great combination of flavors from the savory chicken and bacon with the sweet saucy taste of the Cackalacky Cheerwine Sauce makes for a winning combo.
- 1 – 12.5 oz can cooked white meat chicken, drained well
- 1 large egg
- ¼ cup grated parmesan cheese
- Seasonings of choice (salt & pepper, garlic, etc.)
- Cackalacky Cheerwine BBQ Sauce
- ½ cup shredded cheese
- Toppings of choice (we used cooked bacon, chopped)
Preheat oven to 450ºF. Line baking pan with parchment paper. Spread well-drained chicken on prepared baking pan and bake for 10 minutes to dry out chicken. Remove pan from oven and allow to cool for a few minutes.
Meanwhile, in a bowl, beat egg and add parmesan cheese and seasonings, stirring to combine. Add cooled chicken and mix well.
Spread chicken mixture on parchment-lined pan – spreading into a pizza or flatbread shape and form as thin as possible while still connected.
Bake crust for 10 more minutes at 450ºF (or up to 15 minutes for a crispier crust). Remove from oven and begin assembling pizza.
Spread Cackalacky Sweet Cheerwine Sauce as your base over chicken crust. Top with shredded cheese and cooked bacon pieces (or other toppings of your choice). Bake an additional 5-8 minutes until cheese is melted. Serve with additional side of Cackalacky Sweet Sauce for dipping.
