Not your average meatball here – as seen in our Tasty-style recipe videos brought to you by Food & Travel Writer, Heidi Billotto, you’ll love this savory dish with a uniquely delicious tomato+Cheerwine glaze!
Ingredients
- 1 pound lean ground beef
- 1 egg
- 2 cups steel-cut oatmeal
- ¼ cup of water
- ¾ cup fresh chopped parsley
- 1 cup Cheerwine, divided
- 1 clove garlic, minced
- ¾ cup grated parmesan cheese
- 1 can (28 ounces) crushed tomatoes
- 2 tablespoons soy sauce
- 2 tablespoons apple cider vinegar
Instructions
Preheat oven to 400˚F. In a large bowl, combine beef, egg, oatmeal, water, parsley, ½ cup Cheerwine, garlic, and parmesan cheese. Shape meat mixture into balls and place on parchment-lined baking sheet. Bake for 25 minutes. Meanwhile, in a stockpot combine tomatoes, ½ cup Cheerwine, soy sauce, and vinegar cooking over medium heat until thickened as a glaze. Remove from heat and pour into a small bowl (reserving the rest for serving) and brush each meatball with glaze. Return to oven for an additional 5 minutes. Serve with reserved sauce.
I will be making this recipe and need to know what size can of crushed tomatoes. There are at least 2 sizes. Which one?
Use a 28-ounce can of crushed tomatoes for this recipe.
