Ingredients

  • 1 pound lean ground beef
  • 1 egg
  • 2 cups steel-cut oatmeal
  • ¼ cup of water
  • ¾ cup fresh chopped parsley
  • 1 cup Cheerwine, divided
  • 1 clove garlic, minced
  • ¾ cup grated parmesan cheese
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar

Instructions

Preheat oven to 400˚F. In a large bowl, combine beef, egg, oatmeal, water, parsley, ½ cup Cheerwine, garlic, and parmesan cheese. Shape meat mixture into balls and place on parchment-lined baking sheet. Bake for 25 minutes. Meanwhile, in a stockpot combine tomatoes, ½ cup Cheerwine, soy sauce, and vinegar cooking over medium heat until thickened as a glaze. Remove from heat and pour into a small bowl (reserving the rest for serving) and brush each meatball with glaze. Return to oven for an additional 5 minutes. Serve with reserved sauce.
