Ingredients
For Pancakes
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 eggs
- 2 cups buttermilk
- 1 tablespoon butter, melted
- 1 cup cherries, chopped (fresh or canned)
- 3 tablespoons Cheerwine Syrup
- ¾ cup mini semi-sweet chocolate chips
- Whipped cream (optional as garnish)
For Syrup
- ¼ cup maple syrup
- 1 tablespoon Cheerwine Syrup
Instructions
For Pancakes
In a large bowl, whisk together all dry ingredients. In a medium bowl, using a mixer, beat eggs on low. Add buttermilk, melted butter, chopped cherries, and Cheerwine Syrup. Combine wet ingredients with dry ingredients then mix until just combined. Fold in chocolate chips. Preheat griddle or skillet to medium heat. Using a ⅓ cup measuring cup, pour batter onto hot pan/griddle. Cook until bubbles appear on top of pancakes (about 5 minutes), flip then allow to cook 5-7 minutes. Remove to a plate and continue with remaining batter. (Makes about 16 pancakes.)
For Syrup
Measure ¼ cup maple syrup and add 1 tablespoon Cheerwine Syrup. Whisk or blend using immersion blender. Pour over pancakes then top with whipped cream and additional cherries, if desired.
